What is a sheet pan dinner? A sheet pan dinner is a type of meal that uses one roasting pan and all the various ingredients are placed on top of the meat or poultry. The following will be a recipe for how to create your own sheet pan chicken dinner:
-Lightly season and place thighs skin side down on the parchment-lined baking dish, then roast in oven at 400 degrees Fahrenheit with onion, garlic, thyme, salt and pepper until thigh is tender when pierced with fork (about 45 minutes). The two best tips for cooking chicken thighs is to get them skin side down (the skin will help to form a nice crust to the dish) and to make sure that the skin is browned nicely on top. Once the chicken is cooked through, you can easily flip it over and set aside.
-To prepare the vegetables, heat the olive oil in a large skillet over medium-high heat. Sauté onion, carrot and garlic until tender (about 5 minutes). Remove from heat and set aside.
-Then make both sauces separately. To make the white sauce, add flour to a cold saucepan then whisk in milk slowly to avoid lumps. Add salt, pepper and nutmeg and cook until thick (about 10 minutes). Once it becomes thickened, you can remove from heat and stir in grated cheese. Set aside. To prepare the green sauce, sauté shallot and garlic over medium heat until tender. Add ginger, mustard, salt and pepper to taste. Remove from heat and set aside.
-To assemble the meal, return the chicken to oven with white sauce (as reserved earlier), then return to stove over low heat until chicken is heated through (about 5 minutes). Meanwhile, in a separate skillet add eggs and whisking constantly add butter in stages (1 tablespoon at a time).
This recipe will provide a great meal for two people with plenty of leftovers. The ingredients are relatively simple and easy to find with the exception of the white sauce which can be hard to obtain. Because of this, this dish could easily turn into a family recipe.
